Do ebook readers have their own operating system?
For example does Amazon's Kindle have a mini computer to add programs or is it strictly ebook only capable.
Mostly no. The majority use a "flavour" of Linux, such as Google's Android. Sony uses a flavour of Linux for embedded systems called MontaVista Linux.
The Kindle uses Linux as well, so yes in theory, if the operating system is stored on something that allows writing (flashable ROMs or the internal storage) new programs could be added.
